Happy Friday! I made this Cheesy Broccoli and Chicken Spaghetti Squash Casserole for dinner earlier this week and wanted to share the recipe with you because it was easy, tasty, healthy, and made enough for the two of us for dinner and several lunches. I love spaghetti squash for so many different recipes, my one tip would be to season it well to give it the flavor you want. If you like garlic like me, feel free to use as much as you’d like, I definitely do! Hope you like it!
Some nutrition info: pasta has over 100 calories, while spaghetti squash has only about 20 calories, is richer in protein, and has far fewer carbs than pasta’s 31 grams. Not that carbs are “evil”, but if you want to cut down on them, this is a great option.
